Guilt Free Cake

Introduction

This is a delicious way of making a healthier cake! You will not be able to tell the difference from a regular egg and oil cake. This is a delicious way of making a healthier cake! You will not be able to tell the difference from a regular egg and oil cake.
Number of Servings: 1

Ingredients

    1 box of dry cake mix of your choice (strawberry is my favorite).
    1/2 cup of light applesauce
    4 egg white
    12 oz Cool Whip Free (fat free or light works well too)
    1 package of sugar free/fat free pudding of your choice (cheesecake is great with the strawberry cake)
    4 oz of cream cheese 1/3 less fat (you could try the fat free)

Directions

Beat the cake mix, egg whites, applesauce and 1 1/2 cups of water. (follow instructions on cake box...you are just basically substituting the applesauce for the oil and using 4 eggs whites instead of 3 whole eggs). Bake according to what the box says.

After cake cools for at least 1/2 hours, make the frosting. Beat the cool whip, cream cheese and pudding for 2 minutes or until cream cheese is nicely mixed in with no chunks. Spread evenly over cake and refrigerate.

Makes **15** slices of cake in a 9x13 pan
