3/4 c corn starch
3/4 c potato flour
1/4 c sugar
1 1/4 tsp baking powder
1/2 tsp salt
1/4 tsp guar gum
3/4 c milk
1/4 c vegetable oil
Add vegetable oil, milk and egg; mix until all lumps are gone.
Oil skillet; turn heat to just under medium; pour out to desired size and fry. Note that these tend to be bubbly once the first side is cooked, so pressing down on the pancakes after they've been flipped will make for more even browning.
Makes approx. 20 small pancakes (4 servings).
