Curried Lentil Soup

Ingredients

    3 tablespoons olive oil, divided
    1 medium onion, chopeed
    1 medium carrot, chopped
    2 large cloves garlic, divided
    1 cup green lentils
    4-1/4 cups water, divided
    1 15 to 16 ounce cans chickpeas
    1 tablespoon fresh lemon juice
    2 tablespoons butter
    Salt and pepper to taste

Directions

Makes 6 servings

In a large pot, cook onions and carrots in 1 tablespoon olive oil for 4 minutes. Add 1 clove chopped garlic and cook an additional 4 minutes. Add 2 tablespoons curry powder and cook one minute more. Season with salt and pepper to taste.

Add 4 cups of water and lentils to the pot.

Bring to a boil, then reduce heat and simmer for 30 to 40 minutes.

Meanwhile, puree chickpeas, lemon juice, remaining garlic, 2 tablespoons olive oil, and 1/4 cup water in food processor.

After lentils are tender, stir in chickpea puree and butter. Season with salt and pepper, and thin to desired consistency with water.
