Healthy "Depression" Apple Cake

Introduction

This recipe was given to me at a craft fair, where it was explained to me that during the depression, this was a popular cake since luxuries like shortening, oil, eggs, sugar and flour were often unavailable. Number of Servings: 16

Ingredients

    2 and 1/4 Cups of nonfat dry milk powder
    2 and 2/3 cups of raw oats
    2 tsp baking powder
    2 tsp baking soda
    1 tsp cinnamon
    1 tsp ground cloves
    1/2 tsp allspice
    2 and 1/2 C of unsweetened applesauce
    2 apples, peeled and chopped
    1/2 cup raisins
    1/2 cup chopped walnuts


Directions

Preheat oven to 350* Peel and chop apples, and set aside. Mix all dry ingredients in a large bowl. Add the applesauce, and mix well. Add the remaining ingredients and combine thoroughly. Pour in a bundt pan sprayed with non-stick cooking spray, and bake for 50 minutes. Remove cake and let cool for 10 minutes, then refrigerate to set. The cake will not rise a lot, even with the baking powder and soda, as it is flourless. Makes 16 servings.
