Chicken Spagehetti (Reduced calorie)

Introduction

Low fat version with reduced cheese and sodium Low fat version with reduced cheese and sodium
Number of Servings: 6

Ingredients

    3 cups boiled, deboned, and shredded chicken (dark)
    2 cups chicken broth (1 cup reserved) rest used to boil spagehtti
    1 can reduced sodium cream of mushroom soup
    1/2 can rotel tomatoes (mild)
    4 oz 2% velvetta cheese (1/4 small block)
    1 small onion chopped
    salt & pepper to taste
    1/2 package great value whole wheat thin spaghetti

    *opt. 2% shredded cheese for topping (not caluated into nutrional values

Directions

Boil skinless chicken pieces (legs and thighs), Cool, debone, and shred or cube into three cups. set aside.
Reserve 1 cup chicken broth.

Cook 1/2 box of whole wheat spaghetti in remaining broth and water following directions on box.
Chop onion and cook with noodles. Drain and set aside

Liquid mixture
1/2 to 1 cup reseved chicken broth
1 can reduced sodium cream of mushroom soup
1/2 can mild rotel tomatoes
4 oz cubed velvetta cheese (1/4 small block)
salt and pepper to taste

Add Chicken and spaghetti to liquid mixture and simmer.

*opt. add shredded cheese to top ( not calculated in calories)
