Power Morning Oatmeal

Introduction

Oatmeal with blueberries, flax, walnuts, and protein! The blueberries become somewhat more rehydrated during cooking but taste much sweeter than fresh, and they don't turn the oatmeal purply blue either. Number of Servings: 1

Ingredients

    1/2 c. old-fashioned oats
    1/2 c. milk (nonfat)
    1/2 c. water
    handful dried blueberries

    1/2 t. cinnamon
    sprinkle ground flax seeds
    1 scoop protein powder (BSN lean dessert vanilla used for nutrition calculation)
    handful chopped walnuts

Directions

Combine oatmeal, water, milk, and dried blueberries in small saucepan. Turn heat to medium, cover and let cook until mixture begins to bubble, about 5 minutes. Turn off burner and remove from heat, add remaining ingredients. Serve.

You may need to add more milk after cooking depending on what protein powder you use. Try substituting other dried fruits, such as cranberries or cherries, for variety, or changing the spice to nutmeg, vanilla, or orange zest.
