Wendle's Chicken Tomato Dish

Introduction

Chicken & Tomato dish that is low sodium & low calorie. Put over Couscous, Rice, or Pasta. Chicken & Tomato dish that is low sodium & low calorie. Put over Couscous, Rice, or Pasta.

Ingredients

    4oz Mushrooms, fresh, cut into small pieces
    3oz Onions, raw chopped
    2 cloves Garlic, minced
    1 Tbsp Canola Oil
    Chicken Breast 8 ounces (precooked cut into small pieces)
    Hunts diced no salt added tomatoes basil, garlic, oregano flavor - 1/2 c serving - 3.5 per container, 1.75 cup (remove)
    1/2 tsp Italian Seasoning
    Dash Salt (salt to taste)
    1/3 cup water

Directions

Combine garlic, onion and canola oil in heated sauce pan, stir until onions are soft. Add Mushrooms, chicken, mix well. Add Diced tomatoes, water, Italian seasoning, salt to taste. Bring to a boil, then reduce heat to low, cover and simmer for 10 minutes. Turn off heat and let rest for 5 minutes before serving over your favorite rice or pasta.
