Low Carb Chicken Noodle Soup

Introduction

Not to toot my own horn or anything, but this is quite possibly the best chicken noodle soup I have ever had. Had! Not just made. It is perfect on cold, snowy days like today and warms the body from the inside out. Plus, it is low in carbs and low in fat! Give it a try sometime. Ingredients

    Low Carb Chicken Noodle Soup

    Ingredients:

    4 cups fully-cooked chicken- dark, white or both, de-boned and shredded
    4 cups low sodium chicken broth
    2 cups water
    2 large celery stalks- chopped
    1 ¼ cups cabbage- shredded
    1 cup diced white onion
    5 cloves of garlic- chopped
    ½ Tbsp sea salt
    2 Tbsp chives
    1 tsp garlic powder
    ¼ tsp black pepper
    4 oz Dreamfields Low Carb Angel Hair pasta


    Mel’s tip- Use organic products whenever possible.

Directions

Directions:



Add chicken, celery, cabbage, onion, and garlic, in that order, to a large soup pot.


Pour all 4 cups of chicken broth over top of the mixture.


Add two cups of water


Sprinkle with ½ Tbsp sea salt, 2 Tbsp chives, 1 tsp garlic powder, ¼ tsp black pepper


Cover the pot and cook on medium high until the mixture begins to boil.


Turn the temperature down to low and allow to simmer for 30 minutes, keeping the pot covered and stirring regularly.


After 30 minutes turn temperature up to medium high and allow the soup to return to a boil.


Add 4oz of Dreamfields Low Carb Angel Hair (about a 1/3 of a 13 oz box) pasta to the boiling mix, replace the lid and turn stove to medium.


Allow noodles 5 minutes to cook.


Turn off stove and remove from heat.


Allow 10 minutes to cool- it will be mega hot!
