Chicken Stir Fry

Introduction

Ingredients

    1 tablespoon vegetable oil
    4 boneless, skinless chicken breasts
    1/2 teaspoon onion powder
    2 tbs minced garlic
    8 tbs soy sauce or 1/2 cup - divided
    1 medium onion cut into long slices
    2 tbs corn starch
    1 1/2 cup chicken broth
    1 green bell pepper, sliced
    1 14.5 oz can of diced tomates
    crushed red pepper flakes to taste
    black pepper to taste

Directions

Cut up chicken into 1 inch pieces. Heat oil in large skillet over medium heat. Season chicken with onion powder and black pepper, and place in skillet. Cook for about 5 to 7 minutes, then add the garlic, 4 tbs of soy sauce and the sliced onion. Cook until chicken is done.

Dissolve corn starch in the broth in a small bowl and then blend into the chicken mixture. Stir in the remaining 4 tbs of soy sauce, bell pepper, tomatoes, and crushed red pepper flakes. Heat to boiling, then simmer uncovered until gravy has reached the desired consistency.

Cook rice as directed. Serve chicken mixture over the rice.
