Black Bean & Chicken Stew

Ingredients

    2 tsp canola oil
    1 cup chopped onion
    1 1/2 tsp minced garlic
    1 lb boneless, skinless chicken breast, cut into bite-size pieces
    1 tsp curry powder
    2 tsp Carribbean jerk seasoning or taco seasoning
    .5 tsp cracked black pepper
    .25 cup dry red wine
    2 tbsp capers, drained
    1 (16 oz) can black beans, rinsed & drained
    1 (14.5 oz) can Italian-style diced tomatoes, undrained

Directions

Heat oil in large skillet. Add onion and garlic. Cook 5 minutes. In a medium bowl, combine chicken, curry, jerk (taco) seasoning and pepper. Add chicken mixture to pan and cook 4 minutes. Stir in wine, capers, bean and tomatoes. Cover, reduce heat to low and simmer 10 minutes or until chicken is tender.
