Wisconsin Winter Chili

Ingredients

Olive Oil, 1 tbsp
Onions, 1 Cup Diced
Celery, 2 Cups Diced
Garlic, 3 cloves Minced
Ground beef, lean, 16 oz
Pepper, black, 1.5 tsp Ground
Chili powder, 1 tbsp Ground
cumin (ground), 2 tsp
Canned Tomatoes, 4 cup
Beans, red kidney, 4 cup
Red Pepper (Crushed), 1 tsp
Tabasco Sauce, To Flavor
Directions
In a large pan, saute onion, celery and garlic in olive oil until just tender. Add ground beef and cook until browned. Drain fat.
After drained, place cooked ingredients into large pot and add black pepper, chili powder, cumin, tomatos, kidney beans, and crushed red pepper. Simmer 45 minutes stirring regularly. Add Tabasco if desired to taste. Careful though...heat will intensify over the next 24-hours.
Serves 8
This chili is great on its own or served over a baked potato with just a bit of your favorite cheese.
