CHICKEN APPLE WALNUT BROWN RICE SALAD

Introduction

SERVE COLD OR WARM
cook time is for cooking the brown rice, and chicken. If made from precooked or minute rice would be shorter.

Number of Servings: 6

Ingredients

    4 c. Long grain brown rice cooked
    12 oz cooked, shredded chicken breasts
    1 c. Apples, thinly sliced
    1 c. Red Onion, finely chopped
    1/3 c. black walnuts, toasted
    2 T fresh sage
    6 T light Balsamic Vinegrette dressing

Directions

Cook Rice, let cool.

Grill chicken in pan under medium heat, cool & shred

In large bowl mix rice, chicken, apples, onion, walnuts, and balsamic vinegrette.

Garnish with fresh Sage. (or basil if you prefer)

Yield: 6 1c. servings
