Vegetable Beef Soup

Number of Servings: 10

Ingredients

    1 Lb. Lean Ground Beef or Stew Meat
    2 Med. Onions
    3 Cloves Garlic
    1 cup Fresh Parsley
    1 cup diced celery
    2-3 handfuls baby spinich
    3 garlic cloves
    4 cups (2 boxes) Beef Broth
    3 cups tomato juice
    1 cup pearl barley
    1/2 t dried marjoram
    1/2 t dried basil
    1/2 t thyme
    1 14 oz can petit diced tomatoes
    2 bay leaves
    1 large potato
    1 can mixed vegetables with potatoes
    salt and pepper to taste

Directions

Brown beef with onions and garlic.
Add remaining ingredients.
Cook until spinich is wilted and potatoes are soft.
