IntroductionOnly 3 carbs per serving, this low carb faux potato salad is fine for all phases of Atkins. Can enjoy this warm or cold. Makes 10, 1-cup servings. Only 3 carbs per serving, this low carb faux potato salad is fine for all phases of Atkins. Can enjoy this warm or cold. Makes 10, 1-cup servings.
1 medium sized head of cauliflower
8 eggs, hard boiled and chopped
1/2 C mayonnaise
3/4 C. celery chopped
8 slices (about 1/2 lb) bacon, cooked and crumbled
1/2 C. bacon grease reserved from frying
salt and pepper to taste
Boil eggs to hard boiled.
Fry bacon until crispy and reserve leftover grease.
Chop celery to fine chop
When cauliflower is cooked, break into small florets and put in large bowl. Add chopped celery.
Mix bacon grease and mayonnaise and whisk until mixed well. Add to cauliflower and mix gently until covered.
Add chopped eggs and crumbled bacon.
Salt and pepper to taste and enjoy!
