Chicken Piccata

Number of Servings: 8

Ingredients

    4 Chicken breasts, skinless, boneless
    salt & pepper
    Whote wheat Flour for coating
    4 T butter, room temperature
    1 1/2 T Flour
    2 T olive oil
    1/3 C dry white wine
    1/4 C fresh lemon juice
    1/4 C chicken broth, low sodium
    1/4 C drained capers

Directions

Pound Chicken breasts until fairly thin. Salt & pepper both sides. Dredge in flour, shake off excess and set aside.

Mix 2 T of soften butter with 1 1/2 T of flour in a small dish. Set aside.

Heat 1 T oil in skillet to med-high heat. Brown chicken about 3 mins. per side. Remove to a plate. Using same skillet, stir in wine, lemon juice and broth and bring to a boil over med-high heat. Whisk in butter-flour mixture and boil until sauce thickens, about 2 mins. Stir in capers and remaining 2 T butter. Season to taste with salt and pepper. Put chicken back in skillet asd coat with sauce let warm on low heat if chicken needs a bit more cooking through, just a couple of minutes.

Serve over the lemon pepper pappardelle noodles or carb of your choice with a nice green vegetable and/or salad.

Note:
If sauce is too think, continue adding chicken broth until it reaches desire consistency. This will also cut some of the lemon if it is too much for your taste.

The serving size is one chicken breast but can be cut in half to be 8 servings.
