Balsamic Cherry Chicken (crockpot or oven)

Introduction

We had an abundance of cherries and chicken and this happened one day in the kitchen. :) I also think that a serving is closer to half a piece of chicken but this recipe is based on a whole piece per person.

Number of Servings: 6

Ingredients

    * Chicken Breast, no skin, 3.5lbs ( one family pack)
    * Sweet Cherries, 3 cup, without pits
    * Brown Sugar, 1 cup, unpacked
    * balsamic vinegar, 8 tablespoon
    * Garlic, 1 clove
    * Onions, raw, 1 cup, chopped
    * Sherry, dry, 1 fl. oz

Directions

You could do this very quickly by tossing everything but the chicken in the crockpot, give it a good stir, add chicken and cook on low 8 hours
or you can take your time on a Sunday afternoon and have some good ol' foodie therapy like I did :)
pit cherries until your hands turn purple, dice onions, saute onions, garlic, and cherries in balsamic and sherry for ten minutes, add sugar (no you don't need as much as I used), bring to just boiling, pour over chicken in crockpot (or in a casserole) cook a few hours on low (250-300ish in the oven) Turn heat up to 350 (this is just for looks so if you're using your crockpot ignore this step) scoop cherries and sauce over chicken and bake for 20 minutes, repeat on the other side for ten. Serve
