Slow Cooker Santa Fe Chicken Soup



Introduction

My husband just loves Santa Fe Chicken Soup. After trying several recipes, this is the way we like to make it! Yummy! My husband just loves Santa Fe Chicken Soup. After trying several recipes, this is the way we like to make it! Yummy!
Number of Servings: 12

Ingredients

    One whole roasting chicken
    1 15 oz. can diced tomatoes with green chilies
    2 15 oz. can diced tomatoes
    1 15 oz. can black beans (reduced sodium)
    About 2 cups chicken broth
    1 small chopped onion (about 1/2 cup)
    3 tbsp. chopped cilantro
    1 tsp. garlic powder
    1 tsp. cumin powder
    1 tsp. cayenne pepper (optional, of course!)
    Salt and pepper to taste

Directions

Combine chicken broth, black beans, tomatoes, cilantro, onions, garlic powder, cumin powder, cayenne pepper, and salt in the crock pot.Season chicken breast with salt and lay on top. Cook on low 10 hours or on high for 6 hours. Half hour before serving, remove chicken and shred. Return chicken to slow cooker and stir in. Adjust salt and seasoning. Serve with rice or corn bread (calculated extra).

    Looks yummy. Looks a lot like the chicken tortilla soup I make! I put in a can of enchilada sauce (to replace one of the can of diced tomatoes) I also add a can of "Mexicorn", some chopped green and red peppers, chopped jalapeno peppers, minced garlic and Siracha sauce. Add sour cream and tortillas! - 1/23/11
