1 pkg seitan 1 medium onion, chopped 1 green pepper, chopped 1/2 cup frozen corn 1 tbsp chili powder 1/4 cup water 8 corn tortillas Salsa
Cut the seitan into small bite-size pieces and set aside. Spray a large non-stick skillet with cooking spray. Cook the onion over medium-high heat until soft, stirring occasionally, about 5 minutes. Add the corn, green pepper, seitan, chili powder and water. Continue cooking, stirring until spices are blended, until heated through and the peppers are soft. Warm tortillas as desired. Place fajita mixture along with 1 tbsp of salsa in each tortilla. Fold up & enjoy!

I made these with tempeh instead of seitan (it's just what I had on hand), and I put cheese on top (I'm not vegan), but I really liked them! It was a good use for my tempeh, which I didn't have any special plans for. :)
Looks great, I'm going to try it soon. To all those who don't know what seitan is, it can be easily made by mixing wheat gluten with water and simmering, just Google, there are many recipes and youtube videos.
