No-Bake Stovetop cookies

Introduction

Calculations are made based on making 36 cookies and each cookie counting as one serving. I modified this recipe from one I found online. I cut the sugar in half and used skim milk in place of whole and I could barely tell the difference compared to the original recipe. Actually, I liked it better because it wasn't overly sweet! Number of Servings: 36

Ingredients

    1 cup granulated sugar
    1/2 cup skim milk
    1/2 cup (1 stick) butter
    4 Tablespoons Cocoa powder (the darker the better!)
    1/2 Cup peanut butter
    3 cups quick cook oats
    1 teaspoon vanilla extract

Directions

Have all of your ingredients measured and ready before heating/mixing anything. Also, prepare three cookie sheets with a sheet of waxed paper.

In a medium saucepan, combine sugar, milk, butter, and cocoa. Stir to combine as it heats. When it reaches a rapid boil, cook for 1 1/2 minutes. Remove from heat and stir in peanut butter, oats, and vanilla until the oats are coated.

Drop by teaspoonful onto waxed paper covered baking sheets. Cool until hardened or overnight. The cooling process may be sped up by placing the baking sheets full of cookies in the fridge. The cookies should have the consistency of fudge.

Makes 36 cookies/servings.
