Crockpot Refried Beans

Introduction

Number of Servings: 4

Ingredients

    dry pinto beans, 1 cup
    2 Cups Water
    Salt, 1 tsp
    Chicken Broth, 4 cup (8 fl oz)

Directions

Rinse Pinto beans in water, place in microwave safe bowl with salt and water, cover and cook for 5 minutes on high. Drain beans and rinse again.

Pour 'shocked' beans into crockpot with 4 cups chicken or beef broth. Set crockpot to high and let cook 5-6 hours on high. Beans should be very soft when they are done.

Use a stick blender to puree the beans with the reduced broth.

Optional serving suggestions: Add some chopped onion and fat free sour cream for extra taste

Makes 4 servings around 1/2 cup each.
