Tequila Lime Fish Tacos

Ingredients

    For filling

    1 lb Tilapia Fillets
    2 ounces Tequila
    2 TB Lime juice
    2 tsp olive oil

    Rub:
    1 TB cumin
    1 tsp salt
    1 TB smoked paprika
    1 TB garlic powder
    1 tsp black pepper
    1/4 tsp ground cayenne pepper

    Cilantro Slaw
    2 cups coleslaw mix (green and red cabbage with carrots)
    2 TB cilantro, chopped
    1/4 cup red bell pepper, diced
    1/4 cup light mayo
    2 TB lime juice
    1/2 tsp of salt
    1/2 tsp of cumin
    1/4 tsp ground cayenne pepper
    2 tsp splenda

    8 Whole Wheat carb balance tortillas, fajita size (or Mission thin corn tortillas)



Directions

For marinade: Combine 2 TB lime juice and tequila and pour over fish, refrigerate while you make the slaw

For Slaw"
Combine TB lime juice, spices. splenda and mayo in a medium sized bowl. Add jalapenos, red bell peppers and cole slaw mix.

Spray nonstick skillet with Pam, add olive oil and warm over medium heat. Remove fish from marinade, reserving liquid. Pat dry with paper towels. Sprinkle both sides of fish with rub. Cook fish 3 minutes on each side until it flakes easily. You may have to cook in batches. When all pieces of fish are cooked add back to skillet. Break into small chunks and add reserved marinade. Cook until liquid evaporates. Serve 2 ounces of fish per tortilla with 1/4 cup slaw.
