Onions, raw, 2 small
Broccoli, fresh, 1 bunch
*Peppers, sweet, red, fresh, 1 large (2-1/4 per lb, approx 3-3/4"
Sweet potato, cooked, baked in skin, without salt, 1 medium (2" dia, 5" long, raw)
Garlic, 2 clove
Mushrooms, fresh, 5 large
*Extra Virgin Olive Oil, 1.5 tbsp
Balsamic Vinegar 1 T
Seasoning: Salt, Cracked Pepper, Basil, Red Pepper Flakes
Spread on large baking pan lined with aluminum foil for easy clean up
Bake in oven at 350 until all veggies are tender. (approx 60 min)
Makes approx 6 half cup servings
