Ingredients

    1 pound fully cooked andouille sausage
    1 pound skinless, boneless chicken breast halves -diced
    1 large onion, chopped
    1/2 cup chopped celery
    1/2 cup chopped green pepper
    4 garlic cloves, minced
    2 tablespoons butter
    1 (14.5 ounce) can diced tomatoes, undrained
    1 (6 ounce) can tomato paste
    1 teaspoon hot pepper sauce
    1/4 teaspoon cayenne pepper
    1/8 teaspoon garlic powder
    1/8 teaspoon pepper
    1/2 pound uncooked medium shrimp, peeled and deveined
    Hot cooked rice

Directions

1.In a Dutch oven or large saucepan, saute the sausage, chicken, onion, celery, green pepper and garlic in butter until chicken is browned. Stir in the tomatoes, tomato paste and seasonings. Bring to a boil. Reduce heat; cover and simmer for 6-8 minutes or until chicken is no longer pink.

2.Stir in shrimp; cover and simmer for 4 minutes or until shrimp turn pink. Serve over rice if desired; or cool, cover and freeze for up to 2 months.

  • This was soooo good! It was so much better than those mixes they sell in the boxes. I switched out the andouille sausage for some chicken jalapeno sausage, left out the shrimp (allergy!), and added about 1.5 tsps salt. It was very yummy! DH and DD both went back for 2nds! I will make this again - 8/31/11

  • I find this recipe easy to make, and it is easy to add or delete items to fit your tastes. I used what I had and followed the recipe for my wife. I took a portion of the recipe and added spice. This will be a regular, and has been added to my cookbook so that I can make it again. Thanks for an excel - 1/10/11

  • I'm just curious why this is in the "Vegetarian/Fish" category when it clearly contains meat. I'm sure it would be tasty for those who eat meat, but it's in the wrong category. - 12/12/07
