Creamy Cashew Cheese

Introduction

Great vegan "cheese" with a protein kick! Can be used as a dip for crackers, spread for sandwiches, or tossed with pasta. Great vegan "cheese" with a protein kick! Can be used as a dip for crackers, spread for sandwiches, or tossed with pasta.
Number of Servings: 8

Ingredients

    - 2 cups raw cashews
    - 3/4 cup water
    - 3 tsp lemon juice
    - 2 tsp garlic powder
    - 2 tsp salt (to taste)

    Optional ingredients: Nutritional yeast flakes, pimentos

Directions

Soak cashews at least 2 hours. Drain and add to blender/food processor. Add water, lemon juice, garlic powder and salt. Blend until smooth. Put in container and let sit out at room temperature overnight before putting in fridge.

Makes 8 1/4-cup servings

  • I used to make a recipe similar to this. So I used the same process: washed cashews very well, dumped in blender; heated 3/4 C to almost boiling (this ensure creaminess). Then used 1/4 C lemon juice and a couple Tbs sesame seeds. made 25 oz. YUMMMM! - 12/24/12
