T's Fresh Farro Salad

Introduction

This is extremely fresh tasting even with the tomatoes from the supermarket instead of the garden in the dead of winter January. Made this for the first time over the weekend and everyone loved it! This is extremely fresh tasting even with the tomatoes from the supermarket instead of the garden in the dead of winter January. Made this for the first time over the weekend and everyone loved it!
Number of Servings: 8

Ingredients

    1 1/2 cups Farro
    16 ounces Red Ripe Tomatoes
    1/2 cup Sweet Onions, raw, chopped
    1/4 cup Finely Chopped Parsley
    1/4 cup Lemon Juice (Fresh Squeezed)
    1/4 cup Olive Oil (don't need a full 1/4 cup can use half that)
    Salt and Pepper to taste

Directions

Cook 1 1/2 cups of Farro in 4 cups of water with 2 tsps of Kosher Salt.

Keep on medium to low for 10-20 minutes until tender.
Rinse thoroughly once cooked.

Chop tomatoes up small along with sweet onions and parsley.

Add all to a bowl.

Whisk together the olive oil, lemon juice salt and pepper.

Serve room temperature.
Makes about 8 1 cup servings
