Whole wheat, coconut raisin bread

Introduction

Number of Servings: 16

Ingredients

    Whole Wheat Flour, 2 cup
    Raisins, 1 cup, packed
    Water, tap, 1.5 cup (8 fl oz)
    Baking Soda, 1 tsp
    Baking Powder, 1 tsp
    Salt, .25 tsp
    *coconut extract, .5 tbsp
    Walnuts, .5 cup, chopped
    *Bob's Red Mill Unsweetened Flaked Coconut, 0.5 cup
    *Guar Gum, 2 tsp

Directions

Mix 1 cup raisins and 1/5 cups boiling water. Let sit

Mix 2 cups whole wheat flour, 1/2 cup coconut finely shredded, 1 tsp baking powder, 1 tsp baking soda, 1/4 tsp salt, and 2 tsp guar gum

Add 2 tablespoons cold water, 1 tsp coconut extract and 1/2 cup chopped walnuts to raisin and water mixture

preheat oven to 350

mix raisin, nut and water mixture into dry ingrediants. Will be a slighly dry dough. Press lightly into 9 x 5 x 3 inch pan. I like to use a silicone pan for easy removal later

Bake at 350 degrees for 40 to 50 minutes or until a toothpick inserted around the center of theloaf comes out clean. cool in pan for 10 to 15 minutes on a wire rack. Wrap loaf with palastic wrap and store overnight before serving. Makes 1 loaf, about 16 servings
