Barley and Lentil Soup

Introduction

Delicious, great for those cold winter days. I used low-sodium broth or homemade broth, so sodium would be lower than stated. Delicious, great for those cold winter days. I used low-sodium broth or homemade broth, so sodium would be lower than stated.
Number of Servings: 10

Ingredients

    2/3 cup lentils
    1 onion
    2 carrots
    4 cups swiss chard, roughly chopped
    3 garlic cloves minced
    2 tbsp olive oil
    4 cups broth
    4 cups water
    2/3 cup barley
    1 2/3 cup tomatoes diced

Directions

Rinse and drain lentil, put aside.
Heat oil over medium heat, saute onion until soft, about 3-4 min.
Add carrots saute for about 5 minutes.
Add garlic and stir for 1 minute.
Pour broth, water, and barley bring to a boil and reduce to simmer for about 25 minutes.
Stir tomatoes and lentil simmer for another 40 minutes.
Add chard, cover and simmer for another 5 minutes.

Add salt and pepper to taste.
