Hearty Lasagna

Ingredients

    3/4 lb lean ground beef
    cooking spray
    1 cup chopped onion
    3 garlic cloves, minced
    1/4 cup chopped fresh parsley
    1 can (28 oz.) diced tomatoes
    8 oz can no salt added tomato sauce
    6 oz can tomato paste
    2 tsp dried oregano
    1 tsp dried basil
    .25 tsp black pepper
    12 lasagna noodles
    2 cups fat free cottage cheese
    .5 cup finely grated parmesan cheese
    15 oz carton low fat ricotta cheese
    1 large egg white
    2 cups shredded provolone

Directions

Yield: 9 servings

1. Brown beef and drain.
2. Coat pan with cooking spray and add onion and garlic; saute 5 minutes. Add beef to pan. Add 2 tbsp. parsley, diced tiomatoes, stewed tomatoes, tomato sauce, tomato paste, oregano, basil and pepper. Bring to a boil. Cover and reduce heat and simmer for 15 mins. Uncover and simmer for 20 mins. Remove from heat.
3. Meanwhile, bring 4 quarts of water to a boil and cook lasagna noodles for 12 mins.
4. preheat oven to 350 degrees.
5. Combine 2 tbsp. parsley, cottage cheese, parmesan, ricotta and egg white in bowl.
6. Spread .75 cup of tomato mixture in bottom of 13x9 pan coated with cooking spray. Arrange 4 noodles on top. Top with half of cottage cheese mixture, 2.25 cups of tomato mixture, and 2/3 cup provolone. Repeat layers ending with noodles. Spread remaining tomato mixtuire over noodles.
7. Cover and cook for 60 mins. Sprinkle with remaining provolone and cook for 10 more mins.
