Creole Chicken Soup

Introduction

Number of Servings: 8

Ingredients

    2 cloves minced garlic
    2 cups cooked chopped chicken
    2 Tbs vegetable oil
    1 cup chopped bell pepper
    1 cup chopped onion
    1 cup frozen whole kernel corn
    1 (14.5oz) can diced tomatoes
    1 1/2 tsp Creole seasoning
    1 (32oz) carton chicken broth
    Sour cream, chopped fresh cilantro, optional

Directions

In a Dutch oven, heat oil over medium high heat. Add onion, bell pepper, corn and garlic, and saute until tender. Stir in tomatoes and chicken. Sprinkle with seasoning and saute 2 minutes. Add chicken broth. Bring to a boil reduce heat and simmer 20 minutes. Top with sour cream and cilantro, if desired. Makes 8 1 cup servings.
