Chicken Salad (High Protein, Low Cal)

Introduction

Great for putting on whole wheat bread, crackers, or plain. Fast & easy! Great for putting on whole wheat bread, crackers, or plain. Fast & easy!
Number of Servings: 8

Ingredients

    - 12.5 oz can chicken breast (Hormel)
    - 2 medium hard boiled eggs, chopped
    - 1 raw celery strip (4"), chopped
    - 1/5 cup dill pickles (low sodium), chopped
    - 1 tbsp Mayo
    - 1 tbsp Dijon Mustard
    - 2 tbsp low fat cottage cheese

Directions

1. Open canned chicken breast, drain & put in medium bowl
2. Chop eggs, celery & pickles into small pieces
3. Add eggs, celery, pickles, mayo & dijon mustard to bowl
4. Mix ingredients well
5. Add cottage cheese to mixture, mix well

Ready to serve!
Makes 6-8 servings, each serving approximately 2-3 tbsp
