Mashed Cauliflower

Introduction

GREAT side dish in place of mashed potatoes. Can use 1 lb frozen cauliflower in place of a fresh head. Perfect for a diabetic - even my grand kids think it is great. Number of Servings: 6

Ingredients

    1 medium head cauliflower OR 1 lb frozen flowerettes
    1/2 c half and half or as needed (can used fat free)
    3 Tbsp spreadable butter
    1 clove garlic (roasted adds a nice flavor)
    Salt and pepper to taste
    Snipped chives for garnish

Directions

Wash cauliflower and cut into small flowerettes (or use frozen cauliflower). Microwave/steam for 10 minutes or until very soft. Drain very well and pat dry if boiled rather than steamed.
Process in a food processor adding the milk as needed, butter, chopped garlic, salt and pepper until smooth and fluffy. Adjust seasonings, place in serving bowl and sprinkle with chopped fresh or dried chives.
