Oatmeal Banana Chocolate Chip Muffins

Ingredients

    1 banana, over-ripe, fresh or thawed
    1.5 cups cooked oatmeal
    2 large eggs
    1Tbsp vanilla
    1/2 cup oil
    1 cup canned fruit syrup
    1 cup white flour
    1 cup whole wheat flour
    1 cup brown sugar
    1 tsp baking soda
    2 tsp baking powder
    1 tsp salt
    1 cup semi sweet choclate chips

Directions

Mash banana into oatmeal, beat in eggs and vanilla: make sure there are no lumps in the oatmeal. Add all the dry ingredients except chocolate chips; stir till well mixed. the batter should be somewhat thicker than average cake batter in texture, and spoonable. Fold in chocolate chips, do not over-stir. Using soup spoons, drop into muffin cups or pre-greased muffin tin, bake at 350 for 15-20 minutes. Makes 24 muffins.
