Introduction

I've searched for years for a way to eat cooked oatmeal that I will like, and this is it! It's absolutely delicious right from the oven, and just as good warmed up in the microwave the next day. I've searched for years for a way to eat cooked oatmeal that I will like, and this is it! It's absolutely delicious right from the oven, and just as good warmed up in the microwave the next day.
Number of Servings: 4

Ingredients

    1 cup old-fashioned oats
    1/4 cup dried cranberries or cherries
    1 Tbsp. brown sugar
    2 cups fat-free milk
    1/2 cup chunky applesauce
    1/4 tsp. almond extract
    1/4 cup sliced almonds
    2 Tbsp. shredded coconut

    Optional toppings: vanilla yogurt and additional dried fruit and sliced almonds

Directions

Combine all ingredients in a large bowl. Transfer to a greased three-cup baking dish or bread pan.

Bake, uncovered, at 350 degrees for 45-50 minutes or until set. Serve with toppings if desired. (Nutrition info. does not include additional toppings.)

Makes four 3/4-cup servings.
