Introduction

Number of Servings: 1

Ingredients

    fajita seasoning
    1 tbs extra virgin olive oil
    1/2 cup tofu, cut into thick strips
    1/4 cup red bell peppers, cut into strips
    1/4 cup green bell peppers, cut into strips
    1/4 cup onions, cut into strips

Directions

press excess liquid from tofu. Sprinkle tofu with half of the seasoning mix.
heat oil in pan, brown tofu on all sides. Remove tofu to warming plate. Add veggies,and remaining seasoning; saute' until soft; then add tofu back to veggies and saute', covered for a few minutes more.
This recipe makes three large fajitas. I normally have two for dinner and one the next day for lunch.
