Chicken Enchilada Casserole

Ingredients

    1/2 Rotisserie Chicken or 3 skinless Breasts chopped
    10 Low Carb Flour or Whole Wheat tortillas
    3 c. Shredded lowfat Cheddar or Mexican cheese blend
    1 small can red Enchilada Sauce
    1 can reduced fat low sod. Cream of Mushroom Soup
    8 oz. Fat free Sour Cream
    1 small can of Green Chilies

Directions

Combine soup, sour cream and green chilies. Warm tortillas in paper towels in microwave a few seconds to soften. Divide soup mixure among the ten shells down the center of the shell. spread chopped chicken down the center and sprinkle with cheese reserving some for the top of the casserole. Roll up tortillas as tight as possible and lay seam side down in 9 x 13 pan. Cover all the shells with canned enchilada sauce and sprinkle with remainder of cheese and place in 325 degree oven and bake for 30 minutes until hot and bubble. Makes 10servings
