Introduction

Modified from an allrecipies.com recipe - I replaced the margarine with olive oil, and didn't use peanut butter - I also doubled the cocoa powder. Modified from an allrecipies.com recipe - I replaced the margarine with olive oil, and didn't use peanut butter - I also doubled the cocoa powder.
Number of Servings: 36

Ingredients

    3 cups rolled oats
    1/2 cup cocoa powder
    2 cups granulated sugar
    1/2 cup milk (I used 2%)
    1/4 cup + 2 Tbsp olive oil (I used extra light)
    1 tsp. vanilla extract
    Pinch of salt

Directions

Combine sugar, milk, olive oil, and cocoa powder in pot over medium heat. Boil the mixture for one minute. Remove from heat, add pinch of salt, vanilla, and oats. Stir well. Drop mixture onto waxed paper, and allow to cool for 1 hour.

Makes about 2 dozen no-bake cookies.
