Chickpea and Avocado Salad

Ingredients

    1 can chickpeas
    1/2 english cucumber
    cherry or grape tomatoes, 1/2/ cup
    2 scallions
    cilantro
    avocado 1/2 diced
    lemon juice
    olive oil
    salt and pepper

Directions

Rinse 1 can chickpeas. Put in bowl, Add diced cucumber, tomato, avocado and sliced scallions. Season with salt, pepper fresh squeezed lemon juice and 1 tsp. olive oil. Stir in fresh chopped cilantro. Makes 3 (1 cup) servings
