Rich Chicken Pumpkin Soup

Introduction

Number of Servings: 10

Ingredients

    1 small hormone-free chicken
    1 c. white wine
    4 c. organic chicken broth
    2 T. chopped garlic
    1 can Bush's large butter beans
    4 c. organic chicken broth
    1.5 c. sliced mushrooms
    2 c. chopped onion\
    2 c. chopped celery with tops
    2 c. chopped Swiss chard
    1 can Libby's pumpkin

Directions

Cut up the chicken and cook in a slow cooker with wine and 4 c. broth for 2 hours. Cool and refrigerate. Scrape off hardened fat. Take the skin and bones off the cooked chicken and discard. Chop up the chicken, saving the breasts for another use. Put the chicken in the slow cooker with the gelled broth, additional 4 c. broth and the other ingredients. Cook for another 2 hours until vegetables are tender. Check for salt and pepper. Nutrition count does not include additional salt. Makes 10 servings of 2 cups each.
