Baked beans

Submitted by: RUTHXG

Number of Servings: 8

Ingredients

Soak overnight or by quick method:

1 lb. navy beans (or other small white beans--or kidney beans, for that matter!)
    2 qts. water

In same liquid, bring beans to boil and simmer till tender, about 1.5 hours. Drain, reserving liquid.

Preheat oven to 275-300F. Combine in 2-qt. casserole:
    cooked beans
    1/2 c. molasses
    1/4 c. ketchup (optional)
    2 t. mustard
    2 t. salt**
    1/8 t. black pepper
    1 T. chili powder
    1 onion, chopped
    bean liquid to cover

**Of course, if you need to restrict sodium, you may want to diminish the salt.

Directions

Bake 4-8 hours, adding liquid occasionally if needed. (*Oven temp 275F for 6-8 hours, 300 for just 4 hours.) Cover during first half of baking time, then uncover. Check periodically to make sure they aren't drying out.

Serves 8 with a serving size of 3/4 cup. However, 1/2 c. is quite satisfying as a side dish, so remember to figure calories as 0.66/serving if you restrict yourself to 1/2 c. Servings of 1/2 c = 12.
