Cucumber Leek Soup

Introduction

This low calorie, filling soup is great for cold winter days.
Salt content can be modified by using home-made broths and/or reducing the amount of celery.

Number of Servings: 6

Ingredients

    1 cup leeks, chopped
    1 cup celery, chopped
    3 cups potato, diced
    2 medium cucumbers, peeled, cubed
    32 oz low sodium chicken broth
    1/4 tsp salt
    1/2 tsp ground black pepper

Directions

1. Wash and prepared all vegetables.
2. Combine all ingredients in a large pot. Cook over medium-high heat until it begins to boil.
3. Reduce to medium-low heat, cover and cook until the vegetables are tender (about 45 minutes.
4. Remove from heat and let cool.
5. Puree in a food processor or blender until smooth. Strain the soup to remove any lumps, if desired.

Makes 6 1.5 cup servings

Options: Soup may be served with diced cucumbers and/or a dollop of plain yogurt.
