Eva's Vegetarian Chili

Introduction

High in protein, high in fiber, high in taste and low in fat. High in protein, high in fiber, high in taste and low in fat.
Number of Servings: 20

Ingredients

    2 Tlb olive oil
    1 large onion, chopped
    2 large green pepper, chopped
    2 cloves garlic, minced
    2 large stalks celery, thinly sliced
    2 carrot, peeled and thinly sliced
    2 small zucchini, diced
    2 jalapeno pepper, seeded and diced
    2 Tlb Chili powder
    1/4 tsp black pepper
    15 oz can black beans, rinsed and drained
    14 oz can dark red kidney beans, rinsed and drained
    14 oz can northern beans, rinsed and
    15 oz cannellini beans
    28 oz can tomato puree
    3 a oz cans Rotel diced tomatoes with green chilis
    3/4 c honey
    1tsp parsley
    12 oz pkg Boca Meatless Ground Burger

Directions

Heat oil on stovetop in large dutch oven. Add raw vegetables and cook, stirring occasionally, until soft -- about 15 minutes. Add remaining ingredients. Bring to boil. Reduce heat,
cover and simmer 60 minutes. Makes approximately 20 one cup servings.
