Crockpot Potato Soup

Ingredients

    Milk, canned, evaporated, nonfat, 1.25 cup
    Pepper, black, 0.5 tsp
    Basil, 0.5 tbsp
    Salt, 1 tsp
    Chicken Broth, 4 cup
    Carrots, raw, 2 cup, strips or slices
    Celery, raw, 1 cup, strips
    Onions, raw, 1 cup, chopped
    Parsley, 1 tbsp
    Potato, raw, 6 medium
    Flour, white, 0.25 cup (remove)



Directions

Combine 6 medium potatoes, peeled and diced with 1 cup chopped onion, 2 cups carrots, 1 cup celery, 4 cups chicken broth, 1 1/2 tsp. fresh basil, 1 tbsp. fresh parsley, 1 tsp. salt, and .5 tsp. pepper in a slow cooker.

Cover and cook on HIGH for 3 hours, or until vegetables are tender.

Stir together flour and 1 1/4 cup evaporated non-fat milk (or cream or half-and-half); stir into soup. Cover and cook 30 minutes longer or until hot. If desired, sprinkle bacon bits over each serving.
Makes about 2 quarts/ 8 1-cup servings
