Olive Oil, 1 tbsp
Chicken Broth, 2 cup
Carrots, raw, 2 cup, grated
Fresh Chives, 4 tbsp chopped
White Rice, long grain, 1 cup
Add 1 cup white rice and saute 1 minute. Add 2 cups chicken stock, bring to a boil, cover and simmer gently 20 minutes or until all water is absorbed.
Add 1/4 c. chives, salt, and pepper to taste and toss well.
Makes 4 servings
