Zucchini Pancakes (Barefoot Contessa)

Introduction

Here is an excellent way to make zucchinis palatable to a picky eater. These crispy pancakes really taste just like potato latkes. You could easily serve them with sour cream and apple sauce.

(I found this recipe a bit salty -- I think I'd cut the salt down to 1/2 t.)
Here is an excellent way to make zucchinis palatable to a picky eater. These crispy pancakes really taste just like potato latkes. You could easily serve them with sour cream and apple sauce.

Number of Servings: 5

Ingredients

    2 or 3 small zucchinis
    1/2 yellow onion or whole red onion
    2 eggs
    6-8 T. flour
    1 t. baking powder
    1 t. salt (consider lowering this to 1/2 t.)
    1/2 t. freshly ground black pepper

    butter to grease the pan

Directions

1. grate zucchini and onion together
2. beat eggs and mix in
3. combine dry ingredients in a bowl, then add to mixture (add up to two more tablespoons of flour, if the batter seems to wet)
4. preheat pan
5. add butter to pan
6. cook like pancakes (about 2 minutes per side) -- spread the batter out with your fork so that they're not too thick.
