Snickerdoodles low carb

Introduction

I made this recipe from the Betty Crocker Gluten Free Collection substituting Splenda for sugar. I made this recipe from the Betty Crocker Gluten Free Collection substituting Splenda for sugar.
Number of Servings: 30

Ingredients

    2 eggs
    1 1/4 c Splenda sweetener
    1/4 c butter
    1/4 c shortening
    2 c Bisquick Gluten Free mix
    2 tsp ground cinnamon

Directions

Heat oven to 375 degrees F.
In a small bowl mix 2 tsp cinnamon and 1/4 c splenda and set aside.

In a large bowl, mix eggs, 1 cup of Splenda, butter and shortening. Stir in Bisquick mix until dough forms little pebbles.
Shape dough into 1 1/4 inch balls. (if dough is too soft for shaping into balls, put dough in freezer for 10-15 min.) Roll balls in Splenda cinnamon mixutrel place 2 inches apart on ungreased cooke sheets.
Bake 10-12 min or until set. Immediately remove from cookie sheets to cooling racks.
