Salmon Burgers

Introduction

Ingredients

    1 14.75 oz can Pink Salmon
    1/2 cup seasoned breadcrumbs
    1/2 cup finely chopped onion
    3 tbsp mustard (yellow or spicy)
    2 eggs, beaten
    2 tsp lemon juice
    1/4 tsp salt

Directions

Drain and flake salmon in a medium bowl. Add breadcrums, onion, mustard, egg, lemon juice, and salt; blend well. Shape into eight burgers with hands. In a large non-stick skillet, cook burgers over medium heat until both sides are brown and heated through. Makes 8 servings.
