Ingredients

    2.5 servings egg white substitute
    1/2 link of Coleman Natural sweet apple & maple syrup chicken sausage (sausage is precooked), diced
    2 tbsp red bell pepper, diced
    1/4 cup spinach, cut into strips (chiffonade)
    1 tbsp smart balance with flax (or reduced fat butter substitute)
    1 tbsp shredded cheddar, 2%

Directions

Melt butter over medium heat. Dice the chicken and red bell pepper, saute in smart balance 2-3 minutes, or until peppers soften. Pour egg whites into pan, and let cook until whites are set. Mix in spinach, sprinkle with light cheese. Season with salt and pepper to taste.
