Awesome Vegetarian Chili

Introduction

We freeze this in 2 cup servings, and then thaw when wanted, it tastes great fresh or from frozen, and is low calorie too, bonus! We freeze this in 2 cup servings, and then thaw when wanted, it tastes great fresh or from frozen, and is low calorie too, bonus!
Number of Servings: 14

Ingredients

    1 T Canola or Olive Oil
    1 Medium Onion, chopped
    1 Medium Celery Stalk, sliced
    1 Medium Carrot, chopped
    2 Garlic Cloves, minced
    2 C Corn (canned or frozen)
    3 Cans Pinto Beans rinsed and drained
    (or 1 lb. raw, cooked in slow cooker on high 4-5 hours then rinsed and drained)
    1 28 oz. Can Crushed Tomatoes
    1 10 oz. Can Diced Tomatoes with Green chilies, undrained
    1 C Salsa
    C Ketchup
    2 Cups Vegetable Broth
    1 T Worchestershire Sauce
    1 1 oz package Chili Seasoning (see recipe for this)
    1 tsp. Chili Powder (or to taste)
    1 tsp. Ground Cumin
    tsp. Paprika

Directions

Heat oil in a large Stockpot. Add the onion, celery and carrots, cook until onion is translucent, about 4 minutes, stirring frequently. Increase heat to high, add remaining ingredients.
Bring to a boil, reduce heat and simmer, uncovered, stirring frequently, until vegetables are tender and flavors are blended, about 30-40 minutes.

Serves 14 and freezes great!
