Vegetarian 3-Bean Chili

Introduction

A very filling stew-like chili for cold winter days or as a quick lunch. A very filling stew-like chili for cold winter days or as a quick lunch.
Number of Servings: 6

Ingredients

    1 green bell pepper
    1 medium onion
    1/2 cup dry red kidney beans
    1/2 cup dry pinto beans
    1/4 cup dry black beans
    15 oz no-salt added diced tomatoes
    0.5 cup frozen sweet corn
    2 tbsp chili powder
    1 tbsp garlic powder
    .5 tsp cayenne pepper (adjust to taste)
    2 cups Water

Directions

Soak and cook beans according to directions on package, drain.
Dice the peppers and onions.
Spray bottom of a large pot and saute the peppers and onions together until the onions are soft.
Add the beans, corn and spices and simmer for at least 25 minutes.

**The water mentioned in the ingredients is just for the chili, you'll need 5 cups to soak the beans and another 5 cups to cook them**

This recipe makes 6 generous 1-cup servings.
