Texas Bean Pot

Ingredients

    1 lb. dried pinto beans
    1 onion, chopped
    1 jalepeno or other hot pepper, finely chopped
    1 tsp cilantro
    1 tsp cumin
    1 tsp ground black pepper
    4 cups chicken or beef broth
    hot sauce and/or red pepper flakes to taste (optional for non-Texans)
    1 can (10 oz) diced tomatos and green chilies

Directions

Combine all ingredients except tomatoes and chilies in a large pot. Bring to a boil and then reduce heat to medium-low and continue cooking until beans are tender (about 2 hours). Stir often and add water if needed. Stir in tomatoes and chilies and simmer until ready to serve.

Makes 12 servings of about 3/4 cup each.
